If you bend a straight chain of carbons, do you make a different structure

You can't technically bend a straight carbon chain, and if you did, you'd have to remove a few hydrogen atoms to allow for the bend.
However, cis- and trans- isomers of an alkene (and some other unsaturated hydrocarbons) have the same chemical formula but different structures.
