In my own opinion, the scientist that discovered the most interesting thing about visible light is Sir Isaac Newton.

The reason is

Visible light are usually referred to as wavelengths which are visible to human eyes and Sir Isaac Newton discovered the range in the wavelengths in the visible light Spectrum. He passed sunlight through a rainbow prism and watched how it separated into a kaleidoscope of different colors.
